Ingredients of Chinese Rice

  1. You need 4 cups of cooked rice.
  2. Prepare 3 of large eggs (lightly beaten).
  3. You need 2 of carrots (peeled and diced).
  4. Prepare 1 of medium sized onion (chopped).
  5. You need 2 cloves of garlic (minced).
  6. It's 3 tbsp of vegetable oil.
  7. You need 2 of spring onions (thinly sliced).
  8. You need 3 tbsp of soy sauce.
  9. It's of Salt (to taste).
  10. You need 1 tbsp of grated ginger.
  11. You need 1 cup of frozen peas.

Chinese Rice step by step

  1. In a large skillet over medium heat, heat 1tbsp vegetable oil •Add eggs & let sit for few seconds before lightly scrambling and folding the eggs over itself •Remove from skillet and set aside.
  2. In the same skillet, heat remaining vegetable oil and add onion & carrots •Cook for 5mins stirring occasionally •Stir in ginger, garlic, black pepper, peas & spring onions and cook for 1-2mins.
  3. Add rice and stir in soy sauce, salt & capsicum •Toss to combine and fold in scrambled eggs.
  4. Serve with shredded beef sauce!.
