  1. You need 1 cup of Ingredie brown basmati rice.
  2. You need 1/2 tsp of oil.
  3. You need 1/2 tsp of salt.
  4. It's 5 cups of water.
  5. Prepare of Ingredients for the Pulao.
  6. It's 2 tbsp of ghee.
  7. It's 1 of bayleaf.
  8. It's 1 of " stick cinnamon.
  9. You need 3 pods of green cardamom.
  10. It's 1 of star anise.
  11. Prepare 1/2 tsp of fennel/ sauf seeds.
  12. Prepare 1 tsp of jeera.
  13. You need 1 of onion, finely chopped.
  14. Prepare 1/4 cup of curds.
  15. It's 200 gms of paneer cubes, browned in 1 tsp ghee.
  16. You need 1 tsp of ginger - garlic paste.
  17. You need 2 of green chillies, slit.
  18. It's 1/4 tsp of Turmeric powder (haldi).
  19. It's 1 of tomato, finely chopped.
  20. You need 1/2 tsp of Kashmiri red chilli powder.
  21. You need 1 tsp of Shahi biryani masala.
  22. Prepare 1 tsp of salt.
  23. It's 2 tbsp of mint, finely chopped.
  24. You need 2 tbsp of coriander, finely chopped.
  25. It's 1 tbsp of finely chopping coriander leaves for garnishing.

Healthy Brown Rice Paneer Pulao by Brinda Gandhi, Dietician instructions

  1. For cooking the Brown Rice Heat 5 cups of water in a vessel, once the water comes to boil, add the salt, oil and soaked brown rice and cook them on medium flame till 90% cooked for 10-12 minutes. Remove the cooked rice from water and keep aside.Tip : Make sure you do not overcook the rice.
  2. How to proceed Heat ghee in a non stick pan and add the whole spices, saute for 2 minutes on medium flame.
  3. Add the chopped onions, ginger-garlic paste, green chillies & saute till they onions turn translucent..
  4. Add the chopped tomato & saute till the tomatoes turns soft & mushy Add the turmeric powder, chilli powder, biryani masala and salt. Mix well and cook on slow flame for 2 minutes..
  5. Add 1/4 cup water & let the spices cook. Add whisked curds and saute till the curds combines well in the mixture..
  6. Add mint leaves, coriander leaves, browned paneer and mix well..
  7. Spread the cooked rice evenly on top of the gravy, cover & let it simmer for 5 minutes on slow flame so that the ricr will soak in all the flavours. Serve hot with mixed vegetable raita..
