- Prepare 2 cup of brown rice.
- Prepare 4 of fresh tomatoes diced.
- Prepare 3 of fresh pepper diced.

- Wash brown rice and parboil for about 15mins, rinse and parboil again with little water and a pinch of salt, turn off heat once rice is tender and dried up.
- Heat up frying pan, add olive oil once its hot, add diced onions, garlic and ginger, stir for about a minute.
- Add tomatoes and pepper stir, add salt and stock cube, stir continuously for about 4 mins; finally add carrot and green pea; stir and turn off heat after 3mins.
- Serve with brown rice.
