- You need 2 tbsp of Vegetable oil, to fry.
- You need 1 kg of mince.
- Prepare 2 of onions, thinly sliced.

- It's 2 of chipotle/Ancho chillies.
- Prepare 2 of fresh long green chillies.
- You need 1 tsp of Ground cumin.

- Prepare 1 tbsp of Muscovado sugar.
- You need 2 tsp of chilli powder, or to taste.
- You need 400 g of cooked kidney beans.

- Heat the oil in a large frying pan on a high heat, then brown the mince in batches transferring to the Instant Pot once brown (I leave the pot turned off until everything is added)..
- Fry the onions until slightly browned and add to the pot afterwards..
- Chop up both chillies and add to the Instant Pot..
- Stir in the oregano, cumin, chilli powder and crushed garlic..
- Add the coffee and a generous pinch of salt and set the Instant Pot for 25 minutes on the Meat | Stew setting.
- Once the cycle has completed, allow a natural release for 10-20 minutes and then switch to the simmer setting, add the beans and cook-off some of the liquid and thicken up the chilli..
- If possible, leave overnight and reheat to serve..
