- It's 3 of medium sized sweet potatoes.
- Prepare 2 tbsp of sunflower spread.
- You need 3 tbsp of honey or agave nectar.
- Prepare of grated zest of a whole orange.
- Prepare 2 tbsp of orange juice.

- Peel the sweet potatoes and slice them thinly.
- Melt the sunflower spread / butter in a frying pan and add the sweet potato slices.
- Cover and cook for around 8 minutes over a medium heat, turning a few times during cooking until slightly golden. You may need to do this in 2 batches.
- Mix the honey / agave nectar, orange zest and juice together then pour over the potato slices.
- Turn so both sides are glazed then serve.
